Today was just one of those days. You know the ones I'm talking about. One of those days where the alarm clock rings to early but it's 8:30 am, nothing seems comfortable enough to wear except sweats, and you just want to crawl right back in bed even though it's not a bad day outside or around you. We all have those days, today was one of mine. I was jealous my boyfriend was still sleeping when I left for school at 10 am! I hope that I'm not getting sick, on top of the feelings I mentioned above, I had a sore throat and just achy all over which didn't help my day! By the middle of my second class (I have 4 in a row MWF) I was ready to go home and nap. I grabbed myself a grilled cheese and some Tomato Basil soup (Yum!) just in time to find out my second two classes of the day were cancelled because my professor was also sick. Luckily I got to head home early, stopping at the gas station to get a couple of Karma waters along the way (new obsession!) then lounged on the couch for the day. As a kid, my favorite meal when I was a little under the weather was campbell's chicken and rice bake so obviously that's what I made for dinner tonight. So simple and so delicious, here's the recipe:
1 can cream of mushroom soup
1 can cream of chicken soup
1 cup of water
3/4-1 cup of uncooked white rice
1/4 tsp black pepper
1/4 tsp paprika
uncooked chicken breasts
Put it all together in a casserole dish and back for 45 mins-1 hour. Enjoy!
